Research and Development: Pennethornes

Field Grey worked with food and service provider Compass Group on a uniform solution for its venture at Somerset House: Pennethornes.

Situated in the main Somerset House building, the restaurant was inspired by 19th century architect Sir James Pennethorne and his grand tour across Europe. The bar, café and restaurant serves classic European dishes from Italy, France and Spain — with a modern British twist, of course.

Our approach was to draw on the rich history of the restaurant’s setting and to reflect the bar’s homage to Victorian grandeur.The result was a distinctive apron worn with oversized belts and gathered skirts, while Victorian-style mourning brooches in jet black are worn on ruffled, high-collared white shirts. Vintage cravats were sourced for the male staff and are paired with a simpler apron.
